Brnji Paqla (Broad Bean Rice)

Hello dear readers,

Today was my friend’s birthday – she loves Brnji Paqla so I decided to try it out for her. Brnji Paqla isn’t a very well-known Kurdish dish but it’s delicious nonetheless. I hope you all try it out – it isn’t very difficult.

Ingredients:

2 cups Basmati Rice

2 cups water

2 tbs salt

2 cups dill

2-3 tbs vegetable oil

1 cup broad beans

Left over beef (optional)

1 chicken maggi (Chicken stock)

Directions:

Chopped up dill

1. Start chopping the dill

Peeled broad beans

2. Peel the broad beans

3. Put your rice in some warm water let it set for 15 minutes

4. In a medium sized pot, heat up 2-3 tbs vegetable oil in medium heat; add onions and salt

5. When the onions are golden, add 2 cups of water; bring it to a boil

6. Add your rice and chicken maggi; let it simmer

7. Cover up the pot to minimize air leak; reduce heat

8. After 20-25 minutes the rice should be about done add your dill/bean combo with some meat and let it stay on for about 5-10 more minutes

9. Now it is ready to serve with some chicken/salad

Tip: To maximize the taste of the dill and beans, heat them up with some oil in a pan for few minutes then add it to the rice.

Brnji Paqla – mouthwatering!

Much love,
A.
